It was first isolated in 1940 from the leaves of the white lily. Has the highest content of Japanese knotweed Polygonum cuspidatum. This medicinal plant is both in traditional Japanese medicine under the name Ko-jo-kon as well as in Indian Ayurvedic medicine as Darakchasava widespread (1). Resveratrol gained international recognition but not until the 1990s, mainly as a possible explanation for the "French paradox" (2).
Resveratrol belongs to the large group of polyphenols. The exact name of the grape in this effective form is the Trans-,4,5-trihydroxystilben third. In fact, it resembles the chemical structure of resveratrol of the synthetic estrogen diethylstilbestrol.
Biological molecule that acts as a phytoalexin. In other words, resveratrol is part of the plant's immune system. Its main function is to protect the grapes against fungal, bacterial and viral infections as well as from environmental influences such as UV radiation, ozone, and toxins (3).
Since the phytoalexin acts mainly as a fungicide, grapes usually contain high concentrations of resveratrol.
The manufacturing process of red wine usually has a higher content than white wine, since the mash when extorted juice stay longer. The polyphenol is soluble in alcohol, which explains why more of that wine contains grape juice.
